I know of King Simeon of Bulgaria, but who else are serving or has served in politics

I don't think it's all that likely, since most royals are either exiled or members of a reigning house.

Prince Kuhio of Hawai'i was a representative of Hawai'i in the US government for many years.

Prince Quentin Kawananakoa (also Hawai'i) ran for senator and just barely lost.

Some have been (or still are) members of Parliament, or a Privy Council, or a Crown Council, or a State Council, but more as an automatism because of their function.

The Prince of Wales has been a member of the House of Lords. The Duke of Brabant has been a Senator. That sort of positions.

Prince Hermann Otto zu Solms-Hohensolms-Lich was Vice-President of the Bundestag several times...

Princess Elizabeth of Serbia was presidential candidate.

In Middle east, the royal titles are actually in power, and many family members fill high up roles. The King of Saudi Arabia is automatic head of state, and the de facto PM is family, currently the crown prince. The UAE is ruled by 7 different absolute monarchs, but as an union they have a President and PM of the supreme counsel. Both positions have basically been hereditary since formation, with the ruler of Abu Dabi as President and ruler of Dubai as PM and vice-president. Other positions of power are held by the other 5 leaders and their family. Haya's husband before becoming emir and PM, was minister of defense. Jordan many members have high military appointments. Faisal is supreme commander of the army. Aisha is a military attege to the embassy in DC. Prince Hassan serves as chairman on the UN commission for water sanitation.

Countess Archibald Douglas née Archduchess Walburga of Austria, Princess of Hungary is a member of the Swedish Parliament and was a member of the European Parliament.

Until 2014 the Fürst von Schwarzenberg was minister of Foreign Affairs for Czech Republic. He was known as Karl Schwarzenberg but he is the Chef of the House Schwarzenberg.

He is related to a lot of royal families. A branch belongs to the Dutch nobility (von Schwarzenberg thoe Hohenlansberg).

Until 2016 Count Bronislaw Komorowski was President of Poland. He is related to Queen Mathilde of the Belgians via her mother Anna, Countess Komorowska.

Christian von Stetten, Konstantin von Notz, Viola von Cramon Taubadel, Thomas de Maizière, Eckard von Klaeden, Hans-Georg von der Marwitz, Jutta Armgard von Ditfurth, Karl-Theodor von und zu Guttenberg, Christian von Boetticher, Carl-Friedrich von Beust, Casimir zu Sayn-Wittgenstein, Nina Teufel von Hallerstein, Thilo Sarrazzin, Klaus von Dohnanyi, Hermann Otto zu Solms-Hohensolms-Lich, etc. are names which you would expect under Bismarck but are current German politicians, all belonging to the aristocracy.

Prince Guillaume of Luxembourg (Henri's brother not son) served in the European commission of the EU.

Jamie, Count of Bardi has worked in the Ministry of foreign affairs for the Netherlands and is current ambassador to the Vatican.

His sister Carolina, Marchioness of Sala has a career with the UN, currently serving in Geneva on the committee of the organization of humanitarian affairs.

Otto's family seems to have a taste for politics. 2 of his daughters are involved as well.

-Walburga has been a member of the Swedish parliament, re-elected in 2010, one of the most successful moderate candidates. She has also worked with the European parliament and the ministry of information for Oman in the past.
-Gabriela from 2009-2013 served as the Georgian ambassador to Germany. And has helped in the movement to get Georgia into the European market.

-Borwin, Duke of Mecklenbeg was chairman of the Christian democratic union in his area (head of the house of Mecklenberg)
-Archduchess Alexandra of Austria is married to a Chilean ambassador
-The eldest son of the duke of kent is a former ambassador

Prince Michal Lobkowicz was Minister of Defence,his cousin Prince Jaroslav served as an MP,while their cousin Juri Lobkowicz had it's own political party.
