They are privately educated.
There was a quasi-documentary piece on the Duke and Duchess of Castro on French TV not terribly long ago.
Both princesses have full-time tutors who teach them - this is what allows them to travel and experience an existence which would make many of us who have been the same age be quite envious. Further, the Duchess comes from a well-off family, and is quite well-educated herself, so she surely is guaranteeing that her daughters have the same opportunities that she did...and more.

Does anyone know where or if I could find the documentary online that Benjamin mentioned? It sounds like it's worth watching.
