Her ring is nice though it is not anything special.
As far as I know the ring is a heirloom that was already given to Sonja Haralden by Crown Prince Harald. I think Crown Princess Märtha also wore this ring.
Behind that happy ending, there was a lengthy negotiation. The couple had to sign a prenuptial agreement of separation of property in which it is stipulated that, in the event of divorce, Mette-Marit will leave the Shaugum estate, where the Royal Family has their residence, without property, as it arrived. The document also specifies that his son Marius will not have any right to the crown and that he will not be adopted by Haakon, to avoid problems.
Why was it needed to stipulate that Marius would not have any right to the crown. Of course, he didn't.
And why even consider adopting him if he still had a father? I don't think other stepparents would normally adopt a child from a previous marriage if the other parent is still alive and an active part of the child's life.

We don't actually know that it did since it's just gossip from a magazine.
But if it did then it's probably just to be extra cautious, legally speaking, in a very unusual situation. At this point IA and SM weren't born yet and there was speculation about just how it was going to work with an older brother/son who was part of the family on a personal level but not an official, royal one.
Some stepfathers do end up adopting their "bonus kids" for whatever reason, even if a biological parent is still alive.
