Well they do use (at least the Brits) their dynastic last name if dealing with legal matters. When Kate/William sued the magazine they used their legal last name...they didn't just appear as Their HRH's the D&D of Cambridge on the court documents.

The couple is known as the Duke and Duchess of Sussex.
The Duchess of Sussex, born Meghan Markle can be read on the official hompage.
For my understanding correct form of adress simply should have been:
HRH The Duke of Sussex
HRH The Duchess of Sussex
A quick look at the homepage would maybe have been helpful for the person who was in charge.

Windsor is a surname and was created as such. Bernadotte as well, as it was a surname when Jean-Baptiste Bernadotte became Crown Prince of Sweden. But SHSG as well as "of Greece" is no surname, just a dynastic description of the branch of the House of Oldenburg you are from.
As about giving up your last name - different countries have different rules and a lot of them were changed only recently. We were not told but I think she chose Harry's last name as the family name.

Harry and Meghan left Suva yesterday afternoon and went to a private island.
They are due to leave Fiji for Tonga around lunch time today.
"Hello" has narrowed it down to either of these two lovely spots - one of which is the property of the owner of Red Bull.

Channel 7 has a much different take on what happened. People were ignoring barriers and there climbing and pushing. There were only thin rope barriers put up, so it's even hard to see when there are a lot of people. You can tell in the clip they had from the event as Meghan was leaving, there are people telling each other to stop pushing them.

Judging by the videos and pictures from the event, it was right to cut Meghan’s engagement at the market short. This would’ve happened to any other member of the royal family. Also factoring in that Meghan is pregnant. Gotta be careful with these things.

How lovely to spend some down time on a private tropical island. Just lovely for them during this hectic schedule. Hope they enjoy Tonga as well.
They should take away good memories of happy friendly colourful Fijians.

It doesn't specifically say. I know they are supposed to be flying to Tonga today, but there was no specific time for the next few events.

As a person that was in a situation like Meghan was in Fiji a couple of times, it does tend to give a person a sense of panic and claustrophobia as if the world is closing in on you. With people crowding in to get a better look, be up front and able to meet Meghan and perhaps even just being pushed by a crowd towards her, it was something that the protection detail could not only see but also feel.
To avoid any mishap, the protection detail quickly decided to get her out of there as soon as they could. They made the right decision.
As far as the menu, I'm tending to go along with the idea that Meghan's name was printed on the menu as it would appear as a Fiji native. If this was on a menu back in the UK in the form it was printed, I think somebody's head would roll. Meghan's correct title is "HRH, The Duchess of Sussex" period. No Meghan, No Markle. Even publications that call her Meghan, Duchess of Sussex have it wrong. That is what her title would be if she divorced Harry.
