Considering Nik is the only one with foreign royals, I think we can rule them out. The only royals I'd expect, would be relatives. Fred and Mary have already been used. I doubt they'd reuse any godparent.

Why not a godparent from the elder Prince Henrik's family? Also, HRH Princess Madeleine of Sweden, TRH Princesses Beatrice/Eugenie of York, HH Princess Martha Louise of Norway all come to mind as potential godmothers. Any two of Marie's four brothers as godfathers would be wonderful choices.

I figure there won't be a large royal turnout, except for the DRF. I believe all the adult family members have been chosen as godparents to Joachim's existing children. It would be lovely to see Queen Anne Marie, Prince Gustav of Berleburg or one of his sisters.

I think the little princess' godparents will be like Prince Felix's godparents, consisting only of friends of the parents. If there'll be a royal amongst the godparents, I'm certain that it'll be a cousin of Joachim.
