I didn't realize Mathilde was of any sort of titled or "noble" birth...

Yes, Mathilde has always been noble. Her father was an untitled Belgian noble (son and brother of a baron) from an ancient Flemish aristocratical family. Upon his daughter's marriage king Albert gave him the title of count, and his children the titles of count/countess.
Mathilde's mother is a Polish countess, daughter of a count and a princess.
Mathilde grew up in a castle...

strange that they put the prince and princess of Tirvino on the first row and the kings & queens of sweden and Norway & the reigning prince and princess of Liechtenstein on the second. An error of protocol I guess.

They had a wedding ball the night before their wedding but it was strictly private, no pictures.
Their engagement ball however was entirely broadcasted on tv, and 1500 Belgians from all over the country were invited. You can see pictures of that, in the thread on their engagement:
