Sofia's sister, Princess Irene of Greece is a vegetarian as well. I heard somewhere that Infanta Cristina doesn't eat meat too, but on the other hand she was pregnant almost all the time since her marriege so maybe she started eating meat again...

Sofia is the only vegetarian royal I've read about but I'm not sure if she if she still eats eggs and diary. I know some vegetarians won't eat anything that comes from an animal. Does anyone know?

I don't know for sure. But I think she doensn't eat meat, only. The promise that the Queen made when her father died was just about meat.
I'll try to find further information

In case of Queen Sofia, she drinks milk. There is a photo of her drinking milk from the bottle:

True vegetarian's do not eat the flesh of any living creature.
Pescetarian's eat fish or other seafood. No other animal flesh
Pollotarian's eat fowl, no other animal flesh.
Lacto-ovo vegetarians, exclude ingredients derived directly from the death of an animal and includes cheeses that contain rennet and gelatin.
Vegans eat only food of plant origin, they do not use anything made from animal products at all
I believe that Queen Sophia is a pesco vegetarian. Which means she eats cake, drinks milk and eats fish!

I would think, the aides to the royals inform the host(s) what foods are and are not eaten. They then supply a 'menu' from which the aides or royals choose which meal would be prefered. It probably does not normally affect what other guests are offered.
When I go to different events or perhaps a ball, the organisers or chef are always told that I am a veggie and only once has it been ignored/forgotten. Then I made a point of sending everything back to the chef, with my compliments and asked for just the vegetables! Even in restaurants, if you or your husband/escort have a quiet word with the head waiter, they normally do their best to accomodate you.

Sofia promised her father never to eat meat again? I've never heard this before. Quite interesting. I've always wondered how she became a vegetarian and that answers my question. Do you have anymore info on the subject?

Queen Sofia said to a magazine, I believe it was Vogue, that when her father died she had to quit do something she really like to do and which would be hard to her quit doing it, so she decided it would be not eating meat, but she only said meat not other products like dairy products.

I don't know about any other royal rather than the Queen of Spain being vegetarian. I am as well too a vegetarian it has been almost two years since I ate anything that is meat. People me ask me how I do it? I say I have no taste of it at all.
