Pope Franciscus seems the last one to care about a correct protocol for catholic or non-catholic royals. Queen Máxima is a roman-catholic and some say the Netherlands are no catholic country. That is correct, the state has no religion, Church and State are separated. But catholics are the largest religious denomination in the Netherlands. So in the event that there will be a fullblown white-tie-and-diadems State Visit to the Holy See, Queen Máxima can wear white if she wants.
Such a visit would be interesting by the way. There is a new Ambassador representing the Kingdom of the Netherlands at the Holy See: His Royal Highness Prince Jaime de Bourbon de Parme (a full cousin of the King). When King Willem-Alexander and Queen Máxima visit the Holy See, they will be accompanied by Prince Jaime and Princess Viktória. Hopefully both ladies in long and with diadems.

looking at the picture the man on the far right (as we look at it) seems to be one of the current Grand Duke Henri's brothers, possibly Prince Guillaume (not his son)

The privilege is granted only to wives of reigning Cayholic monarchs so Maxima can not wear white.....

Does anyone know who the lady wearing red is, standing right behind Haakon and Mette Marit. I saw her at the wedding and she reminded me of my god-mother's sister-in-law and it's been bugging me for years!

Since Spanish is both ladies mother tongue, I find it the most logical option
Never in my life I´ve spoken in another language to a Latin American...

Since Maxima is from Argentina and her mother tongue is Spanish and Letizia should be able to speak some Spanish, I'd suggest that they converse in Spanish. 
I highly doubt Letizia speaks Dutch.
