I am curious to know what will be the title that the King will give Sofia when she married.
Will create a Duchy or retrieve a Duchy which will not be in use?

She might become Dutchess of a province when she marries, as King Juan Carlos proceeded with his daughters. But with monarchies toning down, she might remain who she is, Infanta of Spain, with her husband bearing no title at all.
At some point Sofia will cease being a member of the royal family, if she wants a normal life for herself and her family she might decline an additional title.

Its a long way off but I don't think the tradition of lifetime Dukedoms for the Infantas will be continued,it worked very well for both of King Juan Carlos's sisters who's husbands were well respected but the NOOS scandal and the 'Duke de Palma' association may have scuppered future titles .Unless Sofia marries a titled gentleman like her grand aunt Pilar she will be HRH Infanta Sofia of Spain.

Even Infanta Pilar, who married a viscount and a Grandee of Spain, was created Duchess of Badajoz on the event of her marriage. I believe they might continue the tradition. (unless she marries someone above the the title of duke, that is.)

It is important to consider that, except the Heir, the Spanish royals are no "Prince" or "Princess", they do not have a royal title. They are Infante (Infanta) de España: Child of Spain. This is analogue to the situation in the related House of Bourbon, in France, where also the title "Prince" or "Princess" were not incorporated. They were Fils (Fille) de France: Son (Daughter) of France.
All these members were a Royal Highness and were given subsidiary titles. In earlier times these titles were not "just" a name but real apanages. So in the history of the two Bourbon monarchies France and Spain, the creating of titles is very much a tradition. I can not imagine King Felipe not granting his youngest daughter a title. Note that a title cost nothing. It does add a honorific and a specific position to Infanta Doña Sofía.

Despite not having much knowledge of the Spanish royal family, I do agree with @Duc_et_Pair that it is unlikely that Sofía won't be granted a dukedom in the future. The scandal surrounding her aunt and uncle hasn't got anything to do with whichever dukedom Sofía will receive. That the Palma de Mallorca dukedom probably won't get used for a long time after Cristina because of associations to the scandal is a different matter.

Well, that is not exactly, only the children of the King except the heir who is the Prince/Princess of Asturias, and the children of the Prince/Princess of Asturias can wear the title of "Infante/Infanta" which is indeed a royal title, they are Princes and Princesses but with the name of "Infante or Infanta" and are styled as His/Her Royal Highness.
The Princess of Asturias, Leonor, now is equal to CP Victoria or CP Frederik, Haakon, Prince of Wales ... so you can call her Crown Princess Leonor, and little Infanta Sofía is equal with Princess Madelaine for example, and will be for the rest of her life, when she gets married in many many years maybe her father will give her some Crown title, that is her father decision, don't worry about that for the moment, she's only 7.
The King also can grant the Royal title of Infante to some people, for example King Juan Carlos with Infante Carlos, Duke of Calabria, he made him Infante I think in 1994.

Two points to ponder. If the Infanta married a Prince in his own right, eg one of the young Princes of Belgium, would she even need an additional title.
Secondly - will there even be a Spain by that time? With the Scottish independence vote, the Catalans and the Basques are even more determined to be independent. Without these two regions would there much left to call Spain?
