I like Andrew and Sarah's wedding cake the best. It was simple and elegant. Nice decorative touches but not too wacky (which is good for a royal wedding IMO). It looked really good too! I think Maxima and WA's wedding cake is alright until you get to the ribbon-looking thingy at the top. It's not asthetically pleasing and doesn't accent the cake nicely. I'm sure it was good though! :)

Do the engaged couple get to choose what kind of wedding cake they have? Such as the flavor of the cake and it's decorations. Or is it up to the sovereign?

They more than likely used fondant icing on it. Fondant is not actually an icing, but a paste made of sugar [and it doesn't taste too good, IMO], and is incredibly smooth- in fact, it is not actually spread onto the cake, but "draped" over it, pressed and cut to fit.

I love these cakes Thanks so much for sharing these I also like the website from Colthide's wedding-really stunning.I like a different look for cakes and bouquets.

This is the impressive wedding cake of Donna Lavinia, dei Principi Borromeo, and John Philip Elkann. It reproduces the Lingotto (the famous building on the "Via Niza", in Turim, where once was placed the huge car factory of Fiat, company owned by the groom) and the unicorn (the heraldic symbol of the Borromeo clan):
