The Dutch Royal House has, IMO, the best and most interesting information about the hobbies and interests of their members.

Here are some interesting ones (but not all!):

Queen Beatrix: sailing, sculpting, ballet, painting, and music

Prince Willem-Alexander: flying; sports of all kinds (he must be athletic), including tennis, rock climbing (very interesting), and skating. He even completed Elfstedentocht, the big skating marathon, which must have been quite a task. More info here.

Princess Maxima: nature, the arts, music, dance, and watersports, skiing, and running.

Prince Constantijn: drawing, football, music, cooking, tennis, golf, and skiing.

Princess Laurentien: reading, working out, travelling, tennis, sailing, and photography.

Princess Margriet: reading, the theatre, walking, riding, and the "culture, flora and fauna of the Arctic."

Professor Pieter van Vollenhoven: music (he was part of a trio that gave concerts to aid the Victim Support Fund, which he chairs), golf, diving, and the culture, flora, and fauna of the Arctic.

Prince Maurits: music, cooking, sailing, skiing, and running. He ran the New York Marathon with Princess Marilene and friends.

Princess Marilène: tennis, skating, and running. See above.

Prince Bernhard: windsurfing, sailing, swimming, skiing, and music

Princess Annette: tennis, hockey (interesting), skiing, the internet, and reading.

Beatrix also has a passion for horses, as most of the Dutch RF.

King Carl Gustaf: the scounts. Apparently he's also quite into technology.
Prince Carl Philip: car racing
King Abdullah: I heard that he was quite into extreme stuff until he became King and then was forbidden to do them. Also, Star Trek.

Mathilde: Is classicaly trained in Piano, loves reading and socialissing

Philippe: Music and reading

Queen Margrethe is a noted sculptress. At least according to a documentary I saw at least 10 years ago called "King Christian the IX father-in-law of Europe".

Queen Margrethe is a very well known sculptress, when I had a private visit to the palace a year ago. I got to see her work, its good
